Amish Baked Oatmeal

  • 6 cups rolled oats
  • 4 eggs, lightly beaten
  • 1/2 cup coconut oil, melted
  • 2 cups dairy or non-dairy milk
  • 1/2 cup maple syrup
  • 1 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp cinnamon
  • Fresh fruit, for serving
  • Mixed nuts, for serving
  • Flax seeds, for serving

Preheat oven to 350°F.  Mix all ingredients together in a large bowl.  Transfer to a buttered or oiled baking dish.  Bake for 45 minutes.  Cool.  Cut into squares to serve, topped with fruit and/or nuts and/or flax seeds.  To reheat individual portions, cut into 2” squares, top with milk and microwave for one minute.
