Black Garlic Gravy

-1 stick of butter

-1/2 cup of flour

-1/4 cup of chopped parsley

-1 teaspoon of rosemary; chopped

-1 teaspoon of thyme; chopped

-2 sage leaves; minced

-3-4 cups of chicken stock

-5 pieces of black garlic; crushed into paste

-Heavy cream; as desired

-Salt and freshly cracked pepper; as desired

Melt butter in a soup pot over medium-heat. Add flour and cook, stirring constantly, for 2-3 minutes or until reaching a graham cracker color. Add parsley, rosemary, thyme and sage and stir. Add chicken stock as desired, using 3 cups for thicker gravy or 4 cups for thinner consistency. Raise heat slightly to bring contents to a boil. Cook until thickened, stirring base and sides of pan to prevent burning or sticking. Reduce heat and add garlic and cream, bringing gravy to a low boil. Season with salt and pepper to taste and serve immediately.
