Blue Cheese Dip with Bacon Dust and Endive Chips
- 4 Belgain endive or other edive variety; leave removed
- 4 strips bacon; cooked until crisp
- 1 cup sour cream
- 1 cup lowfat Greek yogurt
- 6 oz strong blue cheese; crumbled
- 2 cloves garlic; made into a paste
- Salt and fresh cracked pepepr; to taste
In a medium bowl, mix together sour cream, yogurt, blue cheese, and garlic. Once well combined, season with salt and pepper and set aside. Pulse bacon in a cuisinart until tiny dusty pieces form. Fill each endive “chip” with a tablespoon of dip, sprinkle with bacon dust, and enjoy!
