Blue Cheese Dip with Bacon Dust and Endive Chips

  • 4 Belgain endive or other edive variety; leave removed
  • 4 strips bacon; cooked until crisp
  • 1 cup sour cream
  • 1 cup lowfat Greek yogurt
  • 6 oz strong blue cheese; crumbled
  • 2 cloves garlic; made into a paste
  • Salt and fresh cracked pepepr; to taste

In a medium bowl, mix together sour cream, yogurt, blue cheese, and garlic. Once well combined, season with salt and pepper and set aside. Pulse bacon in a cuisinart until tiny dusty pieces form. Fill each endive “chip” with a tablespoon of dip, sprinkle with bacon dust, and enjoy!
