Butternut Squash Fritters with Spicy Honey Vinegar
For the fritters:
- 2 cups roasted and coarsely mashed butternut squash
- 2 cups all purpose flour
- 3 Tbsp maple syrup
- 1/2 tsp baking powder
- 1 cup milk
- 1 large egg
- Salt; as desired
- Vegetable oil; as needed
For the vinegar:
- 1 part cider vinegar
- 1 part honey
- 1 hot pepper; muddled
- Salt; as desired
Preheat oil to 350-375 degrees. In a medium bowl, combine dry ingredients. In another bowl whisk together wet ingredients. Carefully pour dry ingredients into wet ingredients and mix just until combined. Pour in squash and carefully fold in. Drop spoonfuls of mixture into hot oil and cook until they float. Drain on paper towels, season with salt and serve.
Pour vinegar into muddled jalapeno and let steep for a few moments. Pour out vinegar and mix with honey. Season with salt to taste.
