Chilled Strawberry Melon Soup with Mint
- 4 cups seeded watermelon chunks
- 2 ripe bananas
- 2 cups fresh sliced strawberries, divided
- 1 cup apple juice
- 1 cup plain yogurt
- 2 ice cubes
- 1/4 cup cold mint tea
- Fresh mint sprigs
So easy, so delicious, so pretty, and so nutritious! A great option for those hot summer days!
In a blender, puree the watermelon, bananas, 1 cup strawberries, apple juice, yogurt, and ice cubes until smooth. Pour into a 2 quart pitcher. Add the remaining 1 cup sliced strawberries and the mint tea. Cover and chill. Garnish with mint sprigs.
