Fried Softshell Crab Po’ Boys
For the crabs:
- 2-3 softshell crabs; cleaned
- 1 cup all purpose flour
- `1 tsp cayenne pepper
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp black pepper
- Salt; as needed
- Vegetable oil; for frying
For the po’ boys
- 2-3 fried softshell crabs
- 1 piece of French bread; about 8-10 inches long cut horizontally throught the center
- 2 Tbsp tomato chutney
- 1 cup fresh leafy greens
- 1/2 small red onion; cut into rings
- Lemon garlic aioli; as desired
Heat oil to 350 degrees. In a shallow bowl combine all dry ingredients. Dredge crabs in flour mixture until well coated and dust off any excess flour. Fry in oil for 2-3 minutes until cooked through
Lightly toast bread. Spread tomato chutney on bottom half of bread and aoili on the top half. Stack onions, crab, and greens on bread and cover with top of baguette. Serve immediately.
