Gluten Free Bread

  • 3 cups brown rice flour
  • 3 Tbsp sugar
  • 2 tsp instant yeast
  • 1 1/4 tsp salt
  • 1 1/4 tsp xanthan gum
  • 1 cup warm milk
  • 4 Tbsp soft butter
  • 3 eggs

In a large bowl, combine all ingredients. Place in the bowl of a stand mixer, turn mixer on medium low, and add milk. Once milk is combined add soft butter until small pea size pieces form. Add eggs and mix until combined. Transfer to a large metal bowl, drape with a cotton towel and let rest in a warm spot for one hour to rise. Once dough has risen, transfer to a 8 1/4 x 4 1/4 bread pan and use spatula to level the top. Let rise for another 35 minutes- 1 hour until dough reaches top of bread pan. Preheat oven to 350 degrees and bake bread for 38- 442 minutes until golden brown. Slice warm and butter or use as sandwich bread! To lengthen freshness, refrigerate.
