HL Café’s Tabouli

  • 4 cups bulgur wheat
  • 4 cups boiling water
  • 3/4 tsp olive oil
  • 1 1/2 bunches flat-leaf parsley, trimmed and chopped
  • 3/4 cup finely diced red onion
  • 1 1/4 cups small diced tomato
  • 1 1/2 tsp minced garlic
  • 1/4 cup red wine vinegar
  • 2 Tbsp lemon juice
  • 1/4 cup olive oil
  • 1 1/2 tsp salt
  • 3/4 tsp ground black pepper

Place bulgur wheat in large mixing bowl, add boiling water and 3/4 tsp olive oil, and cover with plastic wrap until all liquid is absorbed.  Remove plastic wrap and let cool to room temperature.  Add remaining ingredients and mix well, adjusting seasoning to taste.
