Lemon Garlic Aioli

  • 4 garlic cloves
  • 1 tbsp Dijon mustard
  • 1 large egg yolk
  • 1 cup vegetable oil
  • Juice from 1/2 lemon
  • Salt and pepper; to taste

In a Cuisinart, pulse garlic, dijon, and egg until well combined, about 15 seconds. With the motor running, very slowly add the vegetable oil until combined, about 2 minutes. Stop the food processor and mix in lemon, salt and pepper. Pulse until incorporated and chill immediately.
