Peaches and Tomatoes with Burrata and Basil

  • 2 ripe peaches cut into thin slices
  • 3 mixed heirloom tomatoes (sliced) or 2 pints mixed heirloom cherry tomatoes (halved)
  • 2 balls burrata
  • 1/4 cup micro basil (fresh basil sliced if micro is not available)
  • 2 Tbsp. olive oil
  • 2 Tbsp. Saba
  • Maldon or sea salt

On a large platter arrange the tomatoes and peaches in a flat layer. Cut the burrata into halves and lay them gently on the platter cut side up. Drizzle the olive oil and Saba over the top. Sprinkle the dish with the basil and two pinches of coarse salt (more or less to your taste). Serve immediately.
