Roasted Cauliflower and Leeks with Golden Raisins and Pine Nuts

  • 1 head cauliflower, cut in 1″ florettes
  • 2 leeks, cleaned and sliced
  • 1/4 cup golden raisins
  • 2 Tbsp pine nuts
  • 3-4 Tbsp olive oil
  • Kosher salt and fresh cracked black pepper

Preheat your oven to 400°F.  On the stove top, working with a large oven-proof skillet, heat the pan over high heat.  In a large bowl combine the leeks and cauliflower.  Toss them together with the olive oil until coated.  Transfer the contents of the bowl into the hot pan.  Do not stir the mixture for 20-30 seconds.  Mix well and transfer the whole pan into the oven.  Cook for 15-20 minutes, tossing the mixture frequently.  The cauliflower and leeks should turn golden brown.  When it is done, remove it from the oven and add the raisins and nuts.  Season with salt and pepper and toss together until the nuts are slightly toasted.  Serve immediately.
