Simple Crunchy Grilled Vegetables
- 1 zucchini or summer squash; sliced in 1/2 length-wise
- 1 red onion; cut into thick rounds
- 2 bell peppers; cut into large planks
- Olive Oil; as needed
- Kosher Salt and Fresh Cracked Black Pepper; as needed
Toss all vegetables with olive oil, salt, and pepper. Grill over high heat until just marked, but still crunchy! Remove from grill and cut into strips or chunks for piling into your sandwich!
