Som Tam (Green Papaya Salad)

  • 1 medium green papaya; shredded
  • 1 carrot; shredded
  • 1 tomato; cut into 3/4 inch wedges
  • 1/3 cup green beans; halved
  • 8-10 mint leaves; cut into thin strips
  • 1/4 cup ground roasted peanuts
  • Juice from 2 limes
  • 4 Tbsp fish sauce
  • 3 Tbsp sugar

In a small bowl, whisk together lime juice, fish sauce, and sugar. Pour over all the other ingredients and toss to combine. This can be made up to 4 hours ahead and left to marinate.
