Summer Picnic Salad with Lemon Yogurt Dressing
- 1 granny smith apple, diced
- 1 firm pear, diced
- 1/4 cup minced red onion
- 1/2 cup diced celery
- 1/4 cup dried cranberries
- 1/3 cup pecans, coarsely chopped
- 2 cups shredded radicchio
- 4-5 red radishes, sliced
- 2 cups shredded baby spinach
- 1/4 cup mayonnaise
- 3/4 cup plain Greek yogurt
- 2-3 TB fresh lemon juice
- 1 1/2 tsp fresh lemon zest
- Salt and freshly ground black pepper, to taste
Packed with fruits and veggies and tossed in a tangy-sour dressing, this summer salad is a must-have at picnics and gatherings alike!
Combine all ingredients up to and including the baby spinach in a large bowl. Toss well. Mix mayonnaise, Greek yogurt, lemon juice and zest together in a small bowl. Season with a small amount of salt and pepper. Taste and adjust with more lemon juice or zest as needed. Pour dressing over salad and toss to completely coat all ingredients.
