Sweet Beet Hot Sauce
- 2 medium sized beets; steamed, peeled, and quartered
- 3-4 hot peppers of your choice ( We recommend 3 jalapenos and 1 habanero); stems removed
- 1 head garlic
- 2 peaches; peeled and halved
- 2 cups water
- 1 Tbsp salt
- 1/3 cup cider vinegar
- 3 Tbsp sugar
Preheat grill to high. Char peppers, peaches, and head of garlic until blackened on grill. Alternatively, use oven broiler to char items. Peel garlic cloves and set aside. In a food processor, puree beets, peaches, peppers, and garlic. Add water as needed to create a thick puree. Transfer to a medium pot. Heat on medium and add salt, vinegar, sugar and water if needed. Simmer for 30 minutes, or until flavors have combined. Finish with an emulsion blender to create a smooth sauce, if desired.
