White Beans with Broccolini
- 1/2 lb. smoked bacon; diced
- 1 white onion; medium dice
- 1 bunch broccolini; trimmed
- 1 large can cannellini beans; drained and rinsed
- 5-10 large garlic cloves; 1/2 minced, 1/2 thinly sliced
- Zest of 1 lemon
- juice of 3 lemons
- 1 cup dry white wine
- Kosher salt; to taste
- Vegetable oil; as needed
Sweat bacon in a pan on medium high heat until bacon is about 1/2 way cooked. Add onion and sweat until bacon is fully cooked. Add beans and mix well with bacon and onions. Reduce heat to medium low. Add about 1/2 cup of wine along with the lemon juice and mix. Separately, heat a wok or large saute pan on high heat with 1-2 Tbsp of vegetable oil. Add broccolini, shaved garlic, lemon zest, and salt, tossing rapidly until broccolini is crisp, but not blackened. Remove from heat and add broccolini/garlic to bean mixture. Fold in broccolini and add remainder of fresh garlic. Salt to taste and cook for an additional 2 minutes. To serve- scoop beans and top with 2-3 pieces broccolini.
