Mama Clarina’s Fried Chicken
For the chicken:
- 1 chicken breast; cut into 4-5 pieces and pounded thin (1 cm or less)
- Vegetable oil; as needed
For the buttermilk soak:
- 1 cup real buttermilk
- 1/4 tsp cayenne pepper
- 1 tsp onion powder
For the dredge:
- 3/4 cup flour
- 1 tsp onion powder
- Fresh cracked pepper; as desired
- 2 1/2 tsp salt
In a small stainless steel bowl combine all ingredients for the soak and whisk rapidly until all spices are well combined. Add chicken and let soak for 10 minutes-1 hour. In another small bowl combine all dredge ingredients and mix well. Remove chicken from soak and dredge in flour piece by piece. Set dredged pieces on a cooling rack. Add about 1 inch of vegetable oil to a deep pot and heat on medium high until oil reaches 425 degrees. Using tongs, carefully place chicken in pot and cook for 1-2 minutes per side until golden brown. Remove from pan and drain on paper towels. Serve as soon as its cool enough to eat!
