Beef Tartare
- 8 oz raw beef; we suggest flat iron, strip, or sirloin
- 1 garlic clove; minced
- 2 shallots; minced
- 1 Tbsp capers; minced
- 1 Tbsp Dijon mustard
- 1 tsp Worcestershire sauce
- 4 Tbsp flat leaf parsley; roughly chopped
- Olive oil; as needed
- Salt and fresh cracked pepper; as needed
- 1 farm fresh egg
Chill meat before cutting. Cut or grind into small pieces. Combine all ingredients in a bowl and mix well. Add as much oil as desired and salt and pepper to taste. To serve, top with a raw, fresh egg yolk and serve with potato chips.
