Beef Tartare

  • 8 oz raw beef; we suggest flat iron, strip, or sirloin
  • 1 garlic clove; minced
  • 2 shallots; minced
  • 1 Tbsp capers; minced
  • 1 Tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 4 Tbsp flat leaf parsley; roughly chopped
  • Olive oil; as needed
  • Salt and fresh cracked pepper; as needed
  • 1 farm fresh egg

Chill meat before cutting. Cut or grind into small pieces. Combine all ingredients in a bowl and mix well. Add as much oil as desired and salt and pepper to taste. To serve, top with a raw, fresh egg yolk and serve with potato chips.
