Beer Steamed Mussels with Grilled Bread

  • Beer used: Allagash white
  • 4 Tbsp butter
  • 1 shallot; thinly shaved
  • 3-4  garlic cloves; thinly sliced
  • 1 cup beer
  • 1 lb cleaned mussels
  • Aioli (optional)
  • Fresh parsley, chopped
  • Kosher salt and fresh cracked black pepper

In a pot or frying pan with straight sides, melt butter over low heat. Add the shallots and garlic and sweat them until they are very soft and fragrant ( about 10 minutes). Add the beer and mix everything together. Bring the mixture to a boil. Add the mussels, toss and cover. Cook for 4 minutes or just until the mussels open. Transfer to a clean serving bowl, top with aioli and chopped parsley and serve immediately! Serve with grilled bread!
