Chicken Satay
- 1 lb boneless, skinless chicken breast; cut into thin strips about 5-6 inches long
- 1/3 cup coconut cream
- 1 tsp ground coriander
- 3 Tbsp sugar
- 1 Tbsp yellow curry powder
- 6 Tbsp fish sauce
- Skewers; soaked in water
In a large bowl, mix together last five ingredients. Add chicken and marinate for 15 minutes. Put chicken on skewers and grill or pan fry until cooked through, about 2-3 minutes per side. Serve with peanut dipping sauce.
