Curried Shrimp Skewers with Cucumber Vinaigrette

For the shrimp:

  • 1 lb large shrimp; shelled and deveined
  • 2 tsp curry powder
  • 1/4 tsp ginger
  • 1/4 tsp ground coriander
  • EVOO; as needed
  • Salt and pepper; as needed

For the vinaigrette:

  • 1 small cucumber, peeled, seeded and chopped
  • 1/2 tsp cumin
  • 1/4 cup extra virgin olive oil
  • 2 Tbsp red wine vinegar
  • 2 Tbsp chopped fresh chives
  • 2 Tbsp chopped fresh parsley
  • 2 Tbsp nonfat or low-fat plain yogurt
  • 1 tsp Dijon mustard
  • 1 tsp sugar
  • Salt and pepper; as needed

These fresh tasting skewers are sure to be a hit at your next cook out or family gathering!

Heat grill to high. Toss shrimp with seasonings, drizzle with oil and combine well. Let rest for 5 minutes to absorb flavor. Place on skewers and grill until charred.

In a Cuisinart, process all ingredients until smooth. Serve chilled
