Dry Fried Green Beans

  • 3 Tbsp vegetable oil
  • 1 lb green beans
  • 2 Tbsp soy sauce
  • 1 tsp sugar
  • Lemon juice, for garnish
  • Chopped scallions, for garnish

In a wok or heavy bottomed skillet, heat the oil until it smokes.  Add the green beans and let them blister.  Toss and cook until they are brown and blistered all over. Add the soy sauce and sugar and mix to coat.  Serve with a squeeze of lemon and fresh chopped scallions.
