Fromagere Heirloom Tomato and Leek Pie
- 4 Tbsp butter
- 2 large leeks; shaved thin (both green and white parts)
- 1 recipe pie dough
- 2 cups of cheese of your choice; I like a mix!
- 3 cups cherry tomatoes
- 1 whole egg
- 1/4 cup milk
- Basil leaves; for garnish
Preheat over to 450 degrees. In a deep pot, melt butter and add leeks. Keep heat at medium-medium low and stir frequently until leeks are soft and fragrant; About 10 minutes. Roll out pie crust to fit a cake or pie pan and place inside pan. Cover with cheese, sprinkle with leeks and cover with tomatoes. Whisk together egg and milk and brush edges of crust with egg wash. Bake tart for 15-18 minutes until tomatoes are tender and crust is golden.
