Garlic Stuffed Lamb Chops with Lemon-Mint Dressing
For the lamb:
- 2 lamb chops
- 4 garlic cloves
- Salt; to taste
- Vegetable oil; as needed
For the lemon-mint dressing:
- Juice from 2 lemons
- 1 cup olive oil
- 8-10 sprigs mint; leaves removed and coarsely chopped
- Salt and pepper; to taste
Using a pairing knife, pierce lamb in two spots to create a clove-sized hole. Insert cloves and salt all sides of lamb. In a large pan, heat oil on medium high heat until it begins to helicopter. Place chops in pan and sear for approx. 3 minutes until browned. Turn and sear for an additional 3-5 minutes until brown and crisp. Finally, sear fat side of chops for a minute or two. Remove from pan and let rest for 6-8 minutes.
In a Ball jar, combine all ingredients and shake until combined. To serve, pour over lamb.
