Ginger Scallion Noodles (Recipe from Momofuku Cookbook)
- 2 1/2 cups thinly sliced scallions
- 1/2 cup fresh ginger; peeled and finely minced
- 1/4 cup grapeseed or other neutral oil
- 1 1/2 cup soy sauce
- 3/4 tsp sherry vinegar
- 1/4 cup sugar
- Kosher salt; to taste
- 6 oz cooked ramen noodles; per serving
In a nonreactive bowl’ combine all ingredients except noodles and let sit for 15-20 minutes to let flavors combine. Top 6 ounces of cooked noodles with 6 Tbsp of ginger scallion sauce, toss and enjoy.
