Ginger Scallion Noodles (Recipe from Momofuku Cookbook)

  • 2 1/2 cups thinly sliced scallions
  • 1/2 cup fresh ginger; peeled and finely minced
  • 1/4 cup grapeseed or other neutral oil
  • 1 1/2 cup soy sauce
  • 3/4 tsp sherry vinegar
  • 1/4 cup sugar
  • Kosher salt; to taste
  • 6 oz cooked ramen noodles; per serving

In a nonreactive bowl’ combine all ingredients except noodles and let sit for 15-20 minutes to let flavors combine. Top 6 ounces of cooked noodles with 6 Tbsp of ginger scallion sauce, toss and enjoy.
