Grilled Cranberry and Chevre Flatbread
- 1 pizza dough; proofed
- 4 oz chevre; crumbled
- 2 Tbsp fresh herbs of your choice (I like rosemary, thyme and sage); chopped
- 4 cloves garlic; minced
- 6 pieces bacon (I like duck bacon!); cooked and diced (optional)
- 1/4-1/2 cup whole berry cranberry sauce
- Honey; as desired for drizzling
- Truffle oil; as desired for drizzling
- EVOO; as needed
- Salt and fresh cracked pepper; as desired
Preheat oven to 450 degrees. Preheat grill to high. Stretch dough and oil both sides well. Place on grill and cook until charred. Flip and drizzle with oil, spread minced garlic across the top, spread on cranberry sauce, sprinkle with cheese, bacon and herbs and remove from grill once bottom side is charred. Place on a baking sheet and bake in oven for about 5-8 minutes until cheese is melted and dough is crisp. Drizzle with honey and truffle oil and season with salt and pepper as desired.
