Grilled Spicy Pork with Green Grape Salsa
- 1 1/2 tsp chili powder
- 1/2 tsp dried oregano
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4-3/4 tsp cayenne pepper
- 1 TB olive oil
- 1 1-lb pork tenderloin, trimmed
- 2 1/2 cups seedless green grapes, diced
- 1/2 medium green bell pepper, small diced
- 2 scallions, trimmed and thinly sliced
- 1 jalapeno, cored, seeded (if desired), and minced
- 3 TB chopped mint
- 2 TB chopped cilantro
- 3 TB fresh lime juice
- Kosher salt and fresh ground black pepper
What an amazing combination of flavors this is! Bring on summer grilling season!!!
Combine first five ingredients in small bowl. Add 3/4 teaspoon kosher salt. Brush 1 tablespoon olive oil over pork and sprinkle evenly with spice mix. Let stand 30 minutes. Meanwhile, preheat grill to medium-high heat. To prepare salsa, in a medium bowl, mix together grapes, bell pepper, scallions, jalapeno, mint, cilantro, and lime juice. Add salt and pepper to taste. When the grill is ready, oil the grate, place pork on grill, and grill approximately 6 minutes each side, or until thermometer reads 145 F internal temperature. Remove pork from grill, let stand five minutes, then slice and serve with salsa.
