Herb Roasted Misty Knoll Chicken Breast

  • 2 lb. skin-on boneless chicken breast
  • 2 sprigs of  fresh thyme; chopped
  • 1 sprig of  fresh rosemary; chopped
  • 1 sprig of  fresh oregano; chopped
  • 3 Tbsp. olive oil
  • 2 Tbsp. lemon juice
  • 2 Tbsp. garlic; minced
  • 2 Tbsp. sea salt
  • 1 Tbsp. finely ground black pepper

Combine all ingredients in a glass bowl and mix well. Chicken can marinate for up to 8 hours or overnight. Preheat oven to 350 degrees. Remove chicken from dredge. Lay the chicken skin side up on a sheet pan and cook at 350 for 30 min or until an internal temp of 165.
