HL Café’s Salmon Burgers

  • 2 lb fresh salmon filets, skin removed
  • 1/2 small red onion, minced
  • 1 small red bell pepper, small diced
  • 1/2 bunch fresh cilantro, chopped
  • 2 Tbsp garlic, minced
  • 1 Tbsp ginger, minced
  • 1 Tbsp lime juice
  • 1 cup bread crumbs
  • 1 small egg
  • 1/4 cup mayonnaise
  • 1 1/2 tsp Dijon mustard
  • 1 1/2 tsp salt
  • 3/4 tsp crushed red chili flakes

For Wasabi Mayo:

  • 1 1/2 Tbsp wasabi powder
  • 2 TB lime juice
  • 1 1/2 cups mayonnaise

These salmon burgers are full of flavor as well as vitamins & minerals, and are terrific served on toasted buns or atop a salad of mixed Asian greens!  Feel free to adjust the amount of wasabi in the Wasabi Mayo to suit your taste buds.

Preheat grill or grill pan to med-high and oven to 375°F.  Use food processor to coarsely grind salmon.  In large bowl, combine salmon with all remaining ingredients.  Form into burger-sized patties.  Grill the patties just until grill marks appear, turning patties 45° on each side to achieve diamond pattern, then finish on a sheet tray in the oven until they reach 145°F.  Serve with Wasabi Mayo.

Combine all ingredients thoroughly.
