Meatball Subs
For the herb and Parmesan meatballs:
- 1/2 ground pork
- 1/2 ground beef
- 1/2 ground veal
- 1 small onion; minced
- 5 garlic cloves; minced
- 2 Tbsp fresh oregano; minced
- 2 Tbsp fresh basil; minced
- 1 egg; beaten
- 1/4 cup parmesan; grated
- 1/3 cup breadcrumbs
- Salt and pepper; to taste
- Vegetable oil; as needed
For the subs:
- 2 foot long submarine buns or baguettes; cut in half, lengthwise
- 2 24 oz jars of your favorite pasta sauce
- 1 lb of you favorite cheese ( We recommend provolone, cheddar, or parmesan!); shredded or cut into thin slices
Preheat oven to 400 degrees. put a few tablespoons of EVOO and onion and garlic into a saute pan and sweat on medium heat until soft. using hands blend together meat, onion, garlic and herbs until well incorporated. Add eggs, breadcrumbs, and salt and pepper and mix well. Form into balls 1 1/2- 2 inches in diameter. Bake in oven until cooked through; 20-25 minutes.
Open bread and cover bottom half with meatballs. Pour sauce over the top and cover with cheese. Place under a broiler on high for just under a minute until cheese is melted. Top with other half of bread and enjoy!
