Perfect GF Flour Tortillas
- 1 1/2 cup rice flour
- 1/2 cup potato starch
- 2 tsp sugar
- 1 tsp xanthan gum
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 Tbsp lard
- 3/4 cups water

In a large mixing bowl, combine all ingredients and mix well. Cut lard into dry mixture using a fork or pastry cutter until small crumbs form throughout. Using a fork to mix dough, slowly add water little by little mixing consistently. Once all water is added transfer to floured surface and knead until smooth and not sticky. Divide dough into pieces between 1-2 tablespoons in size. Roll into balls, flour surface and rolling pin , and roll out as thin as possible. Heat a nonstick pan with a small amount of vegetable oil on high. Cook tortillas one at a time until bubbles appear, flip and cook for an additional minute until bubbles are browned or blackened. Repeat with remaining tortillas. Serve hot.
