Pineapple and Vanilla Bean Empanadas

  • 1/2 ripe pineapple
  • 1/2 vanilla bean
  • 1/4 cup orange juice

Finely dice the pineapple and place it in a medium sauce pan with the orange juice.  Split the vanilla bean and scrape out the seeds with a pairing knife.  Place the seeds and the pod into the pineapple mixture. Bring mixture to a simmer and cook until the pineapple is soft and the mixture is thick.
