West African Banana Fritters with Spiced Sugar
- Peanut or canola oil for frying
- 2 eggs, lightly beaten
- ½ cup cold milk
- 3 TB light brown sugar
- 1 cup flour
- Pinch of baking soda
- 4 ripe bananas, ¼” diagonal slices
- 2 TB white sugar
- 1/8 tsp cinnamon
These are so much fun to make and eat!!!
Heat 2 inches of oil in a heavy saucepan to 375º. Mix the eggs, milk, brown sugar, flour and baking soda in a medium-sized bowl. Add the banana slices a few at a time, coating them well with the batter. Remove the slices with a slotted spoon or fork and place them in the hot oil, being sure not to crowd the pan. Fry the bananas for 2-3 minutes, until lightly golden brown, turning them once. Drain on paper towels. Serve warm in a paper cone, sprinkled with cinnamon sugar.
