Creamy Guacamole

  • 4 ripe avocadoes
  • Zest of one lime
  • Juice of 1/2 lime
  • 1/2 tomato, seeded and diced
  • 1/4 red onion, finely minced
  • 2 Tbsp chopped cilantro
  • Kosher salt and fresh cracked black pepper

Scoop the avocado out of the shell and into a medium bowl.  Using a fork or masher mash the avocado to your desired smoothness.  Add the remaining ingredients, mix well and season to taste with salt, pepper and additional lime juice if needed.
