Sopapillas with Spicy Chocolate Sauce
For the sauce:
- 1/2 cup packed light brown sugar
- Pinch kosher salt
- 1/2 cup unsweetened cocoa powder
- 1 tsp cinnamon
- 1 tsp cayenne pepper
- 1/2 tsp ground cardamom
- 3 Tbsp unsalted butter
- 1/2 tsp vanilla extract
For the sopaipillas:
- Vegetable oil; as needed for frying
- 4, 8-10 inch tortillas; cut into wedges or strips
- Cinnamon sugar; for coating
For the sauce: Bring 1/4 cup water, the brown sugar and salt to a boil in a medium saucepan, stirring until the sugar is dissolved. Whisk in the cocoa powder and spices until smooth. Remove from heat and stir in the butter and vanilla.
For the sopapillas:
In a large pot or fryer, heat 1/2 inch of vegetable oil to 350 degrees. Working in batches, fry tortillas until bubbly and golden, turning once. Transfer to a paper towel lined plate and sprinkle with cinnamon sugar. Drizzle with spicy chocolate sauce.
