Beet and Jalapeno Hot Sauce

  • 1 large beet
  • 6 cloves garlic; roughly chopped
  • 4 jalapenos; seeded
  • 1/2 cup cider vinegar
  • 1/2 cup water
  • 1-2 Tbsp brown sugar
  • Salt; as desired

Preheat oven to 400 degrees. Wrap beet in foil and roast for 1 1/2 – 2 hours until tender. Use a towel to wipe off peel and then dice beet. Using a blender, puree all ingredients together. Add more water if desired for texture. Enjoy!
