Citrus-Marinated Olives

  • 1 orange
  • 1 lemon
  • 4 garlic cloves
  • 1/4 cup olive oil
  • 2 Tbsp sherry vinegar
  • 2 sprigs fresh thyme
  • 1/2 lb olives
  • 1 tsp salt, if needed

Zest half the orange and half the lemon, then combine the zest, the juice of the orange, garlic, thyme, and vinegar.  Add the olives and mix well.   Cover with olive oil and let marinate in refrigerator overnight.
