Elote (Grilled Corn with Lime and Love!)

  • 4 ears of corn; shucked
  • 1/4 cup salted butter; softened
  • 1/2 cup mayonaise
  • 1 cup crumbled cotija cheese (or feta or grated parmesan!)
  • 2 limes; cut into wedges
  • 4 tsp ancho chile powder

Heat grill to high. Grill corn until hot and lightly charred all over, 7 to 10 minutes, depending on the temperature of the grill. Roll the ears in melted butter, spread evenly with mayonnaise. Sprinkle with cheese and ancho chile powder, serve with a lime wedge.
