Healthy Living Café Macaroni Salad

  • 1 lb bowtie pasta
  • 1 ½ tsp lemon juice
  • 1 ½ tsp red wine vinegar
  • 2 TB Dijon mustard
  • ¾ cup vegan mayonnaise
  • 1 ½ tsp salt
  • ¾ tsp ground black pepper
  • ½ cup defrosted peas
  • ¾ cup shredded carrots
  • ½ cup defrosted corn
  • ¾ tsp each: dried basil, thyme and oregano

A cafe favorite!

Cook pasta in plenty of salted boiling water until al dente. Drain well and run under cold water to chill. Drain well. Combine remaining ingredients in a large mixing bowl. Add pasta and mix well. Adjust seasonings as needed.
