I Can’t Believe It’s Vegan Gravy
- 1/2 c Earth Balance (or any other vegan butter substitute)
- 1 small onion; diced
- 5 garlic cloves; minced
- 1/3 c cornstarch
- 4 tsp nutritional yeast
- 4 Tbsp soy sauce
- 3 c vegetable broth
- 1/2 tsp dried sage
- Salt and Pepper to taste
In a medium saucepan melt Earth Balance over medium heat. Add onions and garlic and cook until soft and translucent; about 5 minutes. Stir in cornstarch, nutritional yeast, and soy sauce until a smooth paste forms. Gradually whisk in the vegetable broth. Add the dried sage and bring to a boil. Reduce heat, and simmer, stirring constantly, for 8 to 10 minutes, or until thickened.
