Sweet and Tangy Tomato Chutney
- 1 lb roma tomatoes; blanched and peeled
- 1/3 cup cider vinegar
- 1/4 cup sugar
- 1 tbsp salt
- Fresh cracked black pepper; as desires
Quarter tomatoes and add to a medium saucepan. Turn heat to medium and add all other ingredients. Simmer for 10-15 minutes until tomatoes are soft and juices have reduced. Serve as a relish for sandwiches, cheese plates, eggs, etc.
