Sweet and Tangy Tomato Chutney

  • 1 lb roma tomatoes; blanched and peeled
  • 1/3 cup cider vinegar
  • 1/4 cup sugar
  • 1 tbsp salt
  • Fresh cracked black pepper; as desires

Quarter tomatoes and add to a medium saucepan. Turn heat to medium and add all other ingredients. Simmer for 10-15 minutes until tomatoes are soft and juices have reduced. Serve as a relish for sandwiches, cheese plates, eggs, etc.
