Colorful hand-Cut Salsa
- 3 ripe tomatoes, seeds removed and roughly diced
- 1/2 red or yellow pepper, finely diced
- 1/4 red onion, finely minced
- 1/2 bunch cilantro, leaves picked and torn or roughly chopped
- 3 Tbsp. olive oil
- Zest of one lime
- Juice of 1/2 lime
- Kosher salt fresh cracked pepper
Combine all veggies in a mixing bowl and toss with the dressing. Season to taste with salt, pepper, lime, and oil to taste.
