Chipotle Tofu
- 1 lb. firm tofu; cubed
- 2 tbsp. vegetable oil
- 1 tsp. salt
- ½ tsp. freshly ground black pepper
For the Sauce:
- ½ can chipotle chiles in adobo salsa
- 1 ¼ cups tomato sauce
- 1 ¼ cups tamari soy sauce
- 1 ¼ cups cider vinegar
- 1 Tbsp. basil
- 1 Tbsp. garlic powder
- 1 Tbsp. chili powder
- 1 Tbsp. cumin
- 1 Tbsp. coriander
- Salt; to taste
Tofu is combined with a fiery chipotle sauce and roasted to perfection…YUM!
Preheat oven to 400 degrees. Drain tofu well and blot to remove any excess moisture. Toss with oil, salt, and pepper, and roast until golden brown and crispy. Meanwhile, combine remaining ingredients for sauce in a small bowl. When the tofu is browned, remove from oven and toss with enough sauce to generously coat. There will be extra sauce. Return to oven and bake until sauce is caramelized and bubbly.
