Colorful hand-Cut Salsa

  • 3 ripe tomatoes, seeds removed and roughly diced
  • 1/2 red or yellow pepper, finely diced
  • 1/4 red onion, finely minced
  • 1/2 bunch cilantro, leaves picked and torn or roughly chopped
  • 3 Tbsp. olive oil
  • Zest of one lime
  • Juice of 1/2 lime
  • Kosher salt fresh cracked pepper

Combine all veggies in a mixing bowl and toss with the dressing. Season to taste with salt, pepper, lime, and oil to taste.
