Crispy Garlicky Falafels
- 2 cups canned chickpeas; rinsed
- 1/2 large onion; roughly chopped (about 1 cup)
- 3 tablespoons fresh parsley; finely chopped
- 3 tablespoons fresh cilantro; finely chopped
- 2 teaspoons salt
- 1/2-1 teaspoon dried hot red pepper flakes
- 4 cloves of garlic
- 1 teaspoon cumin
- 1 teaspoon baking powder
- 4-6 tablespoons flour
- Vegetable oil; for frying
Put first 8 ingredients in food processor and process until it forms a very coarse paste, all ingredients should be just smaller than pea size. Sprinkle in baking powder and flour and mix until a clumpy ball forms. Do not over mix. Form into balls 1-1 1/2 inches in diameter. Fill deep pot with 3 inches of oil and heat to 375 degrees. Fry balls for a few minutes per side until crisp and browned.
