Greek Couscous Salad
- 1 lb couscous
- 3-4 Tbsp red wine vinegar
- 4 Tbsp extra virgin olive oil
- 1/2 cup chopped roasted red peppers
- 1/4 cup chopped black olives
- 1/4 cup crumbled feta cheese
- 1/4 cup diced red onion
- 2 Tbsp chopped fresh parsley
- Zest and juice of one lemon
- Kosher salt
- Fresh cracked black pepper
Delicious couscous gets ramped up with the flavors of Greece; olives, feta, red onion and fresh herbs make this salad a show-stopper.
Cook couscous in salted, boiling water. Drain and cool. Combine the couscous, peppers, olives, onion, lemon juice, lemon zest and olive oil and mix until combined. Add the vinegar one Tbsp at a time until the couscous salad tastes tart. If it has too much vinegar, add some more olive oil. Season with salt and pepper to taste. Garnish with crumbled feta and chopped parsley.
