Healthy Living’s Bakeshop Gluten-Free and Vegan Oatmeal Peanut Butter Chocolate Chip Cookies

  • 2 cups gluten free oats
  • 1 cup brown rice flour
  • 2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1tsp sea salt
  • 1/2 cup no-stir peanut butter
  • 1/4 cup olive oil
  • 1/2 cup maple syrup
  • 1/2 cup applesauce
  • 1 Tbsp vanilla extract
  • 1/2 cup chocolate chips

Preheat oven to 350°F. In a medium bowl combine oats, brown rice flour, cinnamon, baking soda, baking powder, and salt. In a large bowl or mixer bowl combine peanut butter, olive oil, maple syrup, applesauce, and vanilla. Mix until well combined. Add the dry ingredients into the wet, mix well to combine. Finally, add the chocolate chips and mix until just incorporated. Line a baking pan with parchment paper and scoop out about a tablespoon at a time and drop onto the parchment paper. Bake for 10-15 minutes or until golden brown.
